Ingredients
  1. 2oz pancetta
  2. 2lb brussels sprouts
  3. 1.5 tbs virgin olive oil
  4. 4 cloves garlic (minced)
  5. salt and pepper
  6. 1/2 cup white cooking wine
Instructions
  1. shred brussel sprouts
  2. sauté pancetta on media low heat until golden (roughly 5 min)
  3. add olive oil and garlic to pan
  4. add white wine and deglaze the pan
  5. add brussel sprouts to pan with salt and pepper
  6. saute on medium heat for 5 minutes until tender and crisp
