Chicken, Asparagus & Sweet Potato: Paleo

Hello, readers of Devolve Fitness! You haven’t heard from me before, but my name is Taylor Mobley and I am the writer and blogger behind blondeandambitiousblog.com. Jeff asked me to share some paleo recipes with you all and I am so excited! I want to share with you what my husband Adam and I had for dinner the other day because A) it was delicious and B) it is insanely healthy. Are you hooked yet? But Taylor…I’m pretty sure you can’t have ‘delicious’ and ‘healthy’ in the same sentence. That, my friend is where you are dead wrong. This meal is paleo, gluten free and is the perfect meal for those busy week nights. Let’s jump into this.

Chicken, Asparagus & Sweet Potato Paleo Dinner

What you need to get started:

1lb boneless chicken breasts
1 tbs olive oil
salt and pepper
4 garlic cloves (or to taste — I really like garlic)
2 medium sized sweet potatoes
1 cup chicken broth
fresh asparagus
Feeds: 2-3

Time: 30-45 minutes


 

What you need to do to make this delicious recipe:

Step One: Cut chicken into cubes and then season with salt and pepper.

Step Two: In a skillet over medium heat, add olive oil, garlic and chicken. Sauté until chicken is cooked all the way through. Then set aside in a bowl.

Step Three: Cube sweet potatoes and cut the asparagus in half.

Step Four: In the same skillet that you had the chicken in, add the chicken broth, sweet potato and asparagus.

Step Five: Cook until vegetables are soft and cooked through.

Step Six: Season with salt and pepper to taste. Then combine chicken and vegetables.

TIP: add the asparagus a little bit after the sweet potato so that you can have a slight “crunch” to your meal.

This meal takes less than a half hour to make and is a definite crowd pleaser. Even my husband (who is notoriously against meals without carbs) has to admit: this fills your stomach and tastes delicious. The only real work you have to do is chop your vegetables and cube the chicken! Even I can do that, and I am a notorious wreck in the kitchen. ALSO: this is a one-pan recipe which means less dishes when you’re done and that is what I can a super win.
